Raised on land in what we describe as a “greenhouse for fish”, Dutch Yellowtail is a high grade sashimi, grilled or smoked classic, and a ‘Green Choice’ recommended by the Good Fish Foundation as an excellent sustainable alternative to overfished species.
Recirculating Aquaculture System (RAS)
Maine Yellowtail are raised on land in what we describe as a “greenhouse for fish”, made possible by recirculating aquaculture systems (RAS). RAS has similar advantages to a greenhouse in that fish are raised in a controlled environment with optimal conditions, which not only means we can renewably produce fish where it is not otherwise possible; but we raise fish that raise the bar. Handled with Love
Working closely with some of the world’s leading equipment suppliers and engineering companies, we have access to proprietary first hand expertise regarding the requirements and demands of the Yellowtail in land-based recirculation systems. This has resulted in Kingfish Maine's production facility, which has been designed to achieve levels of control, safety, reliability and sustainability not currently available in alternative production systems.
Fresh marine water is drawn at high replacement rates, purified, oxygenated and meticulously monitored and controlled to create optimal temperature, light and water conditions for the Yellowtail, resulting in healthy, strong and apparently happy fish.
Substantial efforts and costs have been incurred in order to assure that our operation is safe and healthy for our customers, stress-free and humane to our fish, and careful to protect the nature that surround us.

Sustainability
Sustainability and quality are at the core of all Maine Yellowtail processes, with ASC, BAP and BRC certifications in place. The farm uses 100% GREEN energy to produce premium quality fish and are fully integrated from egg to plate. Not only is their hatchery and production vertical integrated, but they also process and pack locally, so transportation in minimal. The result is reduced emissions, and ultrafresh seafood for our customers.
Maine Yellowtail production is full RAS with next generation filtration and water quality management with 24-hour monitoring. Once the water is supplied to the fish, replacement water is filtered and tested before being returned back to the ocean.
They also remove solids, collaborating with local 3rd parties to complete our waste-to-value stream in the form of fertilizer or biogas.
