Tips for Expecting Sushi Lovers

  • Verify the source. Ask for mercury/selenium test data (we publish ours).

  • Avoid big predators. Say no to swordfish, bigeye tuna, and king mackerel.

  • Thaw properly. Use a fridge, not the counter. Consume within 48 hours.

  • Keep it cold. Stick to ≤38°F, and clean your prep space thoroughly.

  • Cook when in doubt. Even a light sear makes a big difference in safety.
