The Scallops
Our scallops are farmed and harvested in the cleanest waters of the southern ocean Humboldt Current. Certified free of contamination and pollution using state-of-the-art technology, our scallops are harvested, cleaned, and Individually quick frozen in less than 3 hours. This ensures you the most pristine, sweet tasting scallop in the world.

Hanging vs. Bottom Feeding
Scallops are filter-feeders, like all bivalves, and rely on natural plankton. However unlike bottom feeding wild scallops, our cultured scallops are raised in hanging lanterns where they feed in the mid-water column, filtering clean flowing water.

The Region
Acuapesca farms our scallops on an idylliic site that has been used for aquaculture indigenously for over 1,000 years. The farm prides itself on caring for the environment with an ethos for sustainability in the fishery. This farming operation holds a Friends of the Sea accreditation and Aquaculture Stewardship Council (ASC) certification. Acuapesca has its own hatchery and farms. The hatchery process takes 1one month followed by 14 months at sea whilst the scallops grow out.
