From Fresh to Salt Water

Ora King's sustainable breeding program begins in freshwater where King salmon eggs are nurtured in crystal clear waters flowing from Te Waikoropupū Springs — water that has been verified as some of the clearest in the world. After fertilised eggs are hatched, the alevin (juvenile fish) are carefully reared in a constant supply of fresh spring water for one year before the smolt are transported to the Marlborough Sounds to mature in fast flowing sea waters, thus emulating the lifecycle of wild King salmon.

The Feed

Ora King feed is derived of specifically selected ingredients and contain only the essential nutrients needed for healthy salmon. The formulation of the feed changes to meet the dietary requirements of our King salmon throughout their lifecycle. Feed does not contain ingredients of genetically modified/transgenic origin, antibiotics, growth hormones/promoters, or artificial colouring.

Automatic feeders are used to dispense several meals each day — more often when salmon are smaller, and less often as they grow. Underwater cameras closely monitor appetite and activity during each feed, to ensure our salmon receive just the right amount and no feed is wasted.

- NO GENETICALLY MODIFIED INGREDIENTS

- NO ANTIBIOTICS

- NO GROWTH HORMONES

The Feed

FCR

The feed conversion ratio (FCR) for Ora King salmon is around 1.8, which means 1.8 tons of feed is used to produce 1 ton of salmon. In terms of protein conversion efficiency, salmon are better converters than other sources of protein including terrestrial livestock.

In the Kitchen

The naturally high oil content in Ōra King salmon can be seen in the striking marbled fat lines within the bright orange flesh, instantly drawing comparison to Wagyu.

Loved by Chefs

Sometimes likened to being the Wagyu of the sea and a favorite of top-tier chefs such as Tim Hollingsworth, Daniel Boulud, Nobu Matsuhisa, and Thomas Keller.

With a fat content hovering around 25 percent (a typical Atlantic salmon is closer to 15 -17 percent fat content), King Salmon and in particular, Ora King, are some of the largest of all salmon and the fattiest, boasting exceptionally high levels of Omega-3 fatty acids.
