An unforgettable night of community, clean eating, and regenerative inspiration

In our ongoing mission to build a community of changemakers redefining food systems, the Seatopia Dinner Series continues to be a gathering place for the wellness-forward, the sustainability-minded, and the lovers of truly good food.

Our latest event, hosted by Meghan Swidler (@meghanswidler), brought together an intimate group of 9 remarkable women — each a thought leader, healer, or creative force in her own right. Set in a sun-drenched home in Venice, the night was equal parts nourishing and inspiring — a true celebration of conscious living and clean seafood.

A Table Set with Intention

The evening’s menu was a collaborative work of art, crafted by private chef Mariah using Seatopia’s sushi-grade seafood as the centerpiece. The result was a vibrant, seasonal buffet bursting with color and flavor:

  • Peruvian scallops with yuzu kosho
  • Steelhead pastrami with olives, parsley & pistachio over herb-garlic cashew cheese
  • Citrus & herb King salmon over Treviso
  • Seasonal salad of heirloom tomatoes, stone fruit, basil & olive oil
  • Grilled summer squash with tahini & fresh herbs
  • Smashed potatoes with charred tarragon coconut/cashew yogurt & gremolata

Each dish told a story — of clean sourcing, peak-season produce, and the magic that happens when intention meets innovation in the kitchen.

Featured Recipe: Coconut Lime Yellowtail Crudo

A vibrant, summery dish that celebrates clean seafood, citrus, and edible florals — perfect for entertaining or a light solo dinner.

Ingredients:

  • 1 yellowtail sashimi loin
  • 4 golden kiwis
  • 1–2 yellow jalapeños or peppers of choice
  • Pure coconut milk (no additives)
  • 5–7 limes, juiced
  • High-quality olive oil
  • Maldon salt
  • Edible flowers (optional, for garnish)

Instructions:

  • Mix ½ can of pure coconut milk with equal parts fresh-squeezed lime juice.
  • Slice yellowtail and lay it on a paper towel to soak up any extra liquid. Keep refrigerated until you’re ready to arrange.
  • Thinly slice your kiwis and jalapeños to a size that complements the crudo slices.
  • Arrange the dish by alternating a piece of sashimi and a slice of kiwi in a column, creating rows across your serving platter.
  • Top with the sliced peppers.
  • Right before serving, drizzle the coconut-lime mixture to coat. The fish will begin to cure as soon as acid is added, so wait until the last minute.
  • Lightly drizzle olive oil and swirl using a toothpick. The oil and acid won’t mix, creating a beautiful visual effect.
  • Sprinkle with Maldon salt and edible flowers. Serve and enjoy!

Meghan Swidler is a certified detox and functional cleansing expert, advisor to health-forward startups, and the author of From Within, From Deep Within, and The Cleanses. She helps individuals and organizations detox their bodies and their lives — physically, mentally, emotionally, and spiritually.

A: Seasonal, nourishing, and simple — clean ingredients, minimal effort, maximum nourishment.

A: A baked Ora King salmon salad with seasonal greens, miso dressing, fresh herbs, and a sprinkle of yuzu furikake.
