Cajun tartine with New Zealand King Salmon, smashed avocado, spinach, mixed seeds & chilli
My favorite breakfast toast. Sourdough with avo, lime, wilted spinach, flakey Cajun salmon and all topped off with mixed seeds, chilli mayo and chilli flakes.
Ingredients

Certified-clean New Zealand King Salmon
- Cajun spice
- Olive oil

Mixed seeds
- Spinach
- ½ lime
- Chili mayonnaise (optional)
- ½ avocado
- Chili flakes
- Butter

Sourdough bread
- Salt and pepper to taste
Directions

1.Set oven to 390 degrees F

2.Put salmon on a baking tray and drizzle with olive oil, cajun seasoning, salt and pepper. Bake salmon for 10 minutes, then set aside for 10 minutes

3.Using a fork, mash the avocado with salt and pepper, a big squeeze of lime juice, and a pinch of chili flakes to taste

4.To a pan, add a small amount of butter and 2 large handfuls of spinach, and salt and pepper. Cook on medium heat until the spinach is wilted (about 5 minutes)

5.Toast your bread and cover with avocado mixture. Top with spinach, salmon, salt and pepper, chili mayonnaise (optional), chili flakes, and a squeeze of lime
