This flavorful salad is vibrant & healthy, helping you to stay strong and in shape for summer. It’s easy to put together, and full of fiber, protein, live enzymes and minerals. Don’t be shy about modifying it to your liking. We recommend using a plant-based cream cheese. Bon Appétit!

Ingredients

4 teaspoons Everything Bagel Blend
4 radishes, thinly sliced
1/2 cucumber, sliced
1/2 red onion, thinly sliced
8 cups salad greens, I prefer a combination of arugula, mesclun and herbs
3 tablespoons lemon juice
3 tablespoons extra virgin olive oil
1 avocado, pitted and quartered
1 package Petuna Steelhead Trout
3/4 cup cream cheese
4 slices bread, toasted

Directions

1. In a bowl combine the radishes, cucumber, red onion, salad greens, lemon, juice and olive oil. Toss to coat. Season to taste with salt and pepper.
2. Divide among 4 plates. Top with avocado and Petuna trout.
3. Spread 3 tablespoons cream cheese onto 1/2 bagel or toast. Top with Everything Bagel Blend. Serve with the salad.
