Pour olive oil into a heated pan

Cook the Barramundi from the skin side down until it sears

Throw 2 oz. of butter to start the baste

Once the butter starts to brown, baste the Barramundi until the meat gets white

Once the skin is fully seared and crispy, flip the Barramundi to cook the other side.

After the Barramundi gets a full clean sear, let it cook in the oven for a few minutes under 425 F°
