Directions
Cure the Steelhead

1.Prepare and cure the steelhead loin following the 24–36 hour citrus cure method.

2.Rinse, dry, and set uncovered in the refrigerator for 6–12 hours.

3.Slice thinly against the grain just before assembling.
Quick Lemon Pickle

4.Place cucumber, daikon, and red onion in a small bowl. Add fresh lemon juice and a pinch of sea salt.

5.Toss gently and let sit for 5–10 minutes, just until lightly softened but still crisp. Do not over-marinate — this is a bright, fresh pickle, not a ferment.
Assemble the Bagel

6.Spread a generous layer of cream cheese onto the toasted bagel.

7.Layer with:
- Thin slices of cured steelhead
- A small mound of lemon-pickled vegetables
- Capers
- Fresh dill fronds
- A spoonful of salmon roe -
8.Serve immediately.
