Steelhead En Papillote with Kombu & Ginger
A gentle steam-bake that infuses mineral richness and warmth
Ingredients

1 Steelhead fillet

1–2 pieces kombu seaweed (large enough to wrap the fish)

1 lemon, thinly sliced

Fresh ginger, finely chopped

Sea salt

Seaweed ghee

Parchment paper (2 large sheets, at least 5 inches larger than the fillet on all sides)
Directions

Preheat the oven to 350°F (175°C).

2.Prepare the parchment:
Cut two large squares of parchment paper, each at least 5 inches larger than the steelhead fillet on all sides. Place one sheet flat on your work surface.

3.Build the base:
Lay lemon slices directly onto the parchment paper, forming a bed slightly larger than the fillet.

4.Layer the kombu:
Place a piece of kombu seaweed on top of the lemons.

5.Add the steelhead:
Set the steelhead fillet on top of the kombu.

6.Season and finish:
Sprinkle chopped ginger evenly over the fish and add a light sprinkle of sea salt

7.Spread a thin layer of seaweed ghee over the top of the fillet

8.Wrap the kombu:
Fold the kombu up and around the fish and aromatics, enclosing the fillet.

9.Seal the papillote:
Lay the second piece of parchment over the top. Fold and crimp the edges of both parchment sheets together, sealing tightly to create a steaming pocket that will trap moisture and infuse flavor.

10.Bake: Place the packet on a baking sheet and bake for 7 minutes.

Carefully open the parchment (watch for steam) and serve immediately, spooning any infused juices over the fish.
