Sea moss (enough to steep and remove)

Directions

1.Warm the broth:
Pour 2 cups of bone broth into a saucepan and gently heat to 120°F (49°C). Use a thermometer to monitor temperature—do not allow it to simmer or boil. -
2.Infuse with sea moss:
Add the sea moss to the warm broth and steep for a few minutes to infuse minerals and flavor. Remove and discard the sea moss. -
3.Poach the scallops:
Add the room-temperature scallops to the broth. Using a thermometer, carefully monitor the broth temperature, keeping it gentle and stable.
Cook until the scallops reach an internal temperature of 120°F. -
4.Remove scallops:
Once cooked, remove the scallops and place them directly into the serving bowl. -
5.Finish the dish:
Add a pinch of fresh chopped parsley, drizzle with olive oil and pour the warm, sea moss–infused broth over the scallops until they are almost submerged -
6.Serve immediately
