Gently Poached Scallops in Sea Moss–Infused Bone Broth
A mineral-rich, low-heat preparation for deep nourishment. Note: This quantity is considered an appetizer for one person, adjust accordingly.

Fresh scallops, brought to room temperature

Sea moss (enough to steep and remove)

Directions

1.Warm the broth:
Pour 2 cups of bone broth into a saucepan and gently heat to 120°F (49°C). Use a thermometer to monitor temperature—do not allow it to simmer or boil. -
2.Infuse with sea moss:
Add the sea moss to the warm broth and steep for a few minutes to infuse minerals and flavor. Remove and discard the sea moss. -
3.Poach the scallops:
Add the room-temperature scallops to the broth. Using a thermometer, carefully monitor the broth temperature, keeping it gentle and stable. Add the scallops one by one to maintain temperature in the broth and slowly poach them.
Cook until the scallops reach an internal temperature of 120°F. -
4.Remove scallops:
Once cooked, remove the scallops and place them directly into the serving bowl. -
5.Finish the dish:
Add a pinch of fresh chopped parsley, drizzle with olive oil and pour the warm, sea moss–infused broth over the scallops until they are almost submerged -
6.Serve immediately
