Caramelised King Salmon with a Honey Marinade & Herb Yogurt Dressing

Ingredients

2 king salmon fillets

2 tbsp honey

2 tbsp lime juice

1 tbsp grated ginger

½ cup Greek yogurt
-
2 tbsp chopped dill
-
2 tbsp chopped parsley

zest of 1 lime

salt to taste
Directions

1.In a small bowl, mix the honey, lime juice, and grated ginger.

2.Place the king salmon fillets in a shallow dish and pour the marinade over them. Let them sit for 15 minutes.

3.Meanwhile, in another bowl, mix the Greek yogurt, dill, parsley, lime zest, and a pinch of salt.

4.Using a blowtorch or a hot pan, cook the salmon quickly until it is caramelized on the outside but still tender inside (about 1-2 minutes per side).

5.Serve the salmon topped with the herb yogurt mixture.
