This beautiful dish brings the treasures of the sea together in a harmonious collective, featuring pristine shrimp, tender scallops, and a crowning finish of jewel-like salmon roe.
Ingredients
-
1/2 lb shrimp, peeled and deveined
-
1/2 lb scallops
-
2 tbsp olive oil
-
3 cloves garlic, minced
-
1/2 cup cherry tomatoes, halved
-
1/4 cup white wine
-
2 tbsp lemon juice
-
2 tbsp fresh parsley, chopped
-
Fresh pasta (from scratch or store-bought)
-
Salmon roe (for topping)
Directions
-
1.Cook the pasta according to your recipe or package instructions. Drain and set aside. In a large skillet, heat the olive oil over medium-high heat.
-
2.Add the shrimp and scallops; cook until shrimp are pink and scallops are just golden (about 2-3 minutes per side). Remove and set aside.
-
3.In the same pan, add garlic and cook until fragrant (about 30 seconds). Add cherry tomatoes and cook for another 2 minutes.
-
4.Deglaze the pan with white wine; cook until it reduces slightly (1-2 minutes). Stir in lemon juice and parsley, then return the shrimp and scallops to the pan to warm through.
-
5.Toss the seafood mixture with the cooked pasta.
-
6.Top each serving with a small spoonful of salmon roe.
