Spicy Salmon Hand Rolls with Pickled Radish, Avocado & Cucumber
Bring the sushi bar experience home with these vibrant Spicy Salmon Hand Rolls. Rich, cubed salmon tossed in a creamy, fiery Kewpie-sriracha dressing is perfectly balanced by buttery avocado and the refreshing crunch of cucumber and quick-pickled radish.
Ingredients

4 salmon portions, cubed

2 tbsp Kewpie mayonnaise

2 tbsp sriracha (to taste)

1 tsp sesame oil

1 tsp tamari

½ tsp rice vinegar
-
1 scallion, finely sliced
-
1 tsp toasted sesame seeds

1 bunch radishes, julienned
-
½ cup rice vinegar
-
½ cup water
-
1 tbsp cane sugar
-
1 tsp sea salt
-
6 sheets nori, halved
-
1 Persian cucumber, cut into matchsticks

2 avocados, thinly sliced

Cooked sushi rice

Wasabi, for serving

Toasted sesame seeds
Directions

1.Make the Pickled Radish - combine rice vinegar, water, sugar, and salt in a jar. Shake until dissolved. Add radishes and let sit for 20–30 minutes until bright and crisp.

2.Prepare the Salmon - in a bowl, gently fold together salmon, Kewpie, sriracha, sesame oil, tamari, rice vinegar, and scallion. Adjust seasoning to taste. Keep chilled until serving.

3.Prepare the Vegetables - slice cucumber and avocado into thin matchsticks.

4.Assemble the Handrolls - place half a sheet of nori shiny side down. Add a thin layer of rice on the left side. Top with salmon mixture, cucumber, pickled radish, and avocado. Roll into a cone shape, sealing with a few grains of rice.

5.Finish - sprinkle with toasted sesame seeds.

Serve these hand rolls immediately so the nori stays perfectly crisp, or set up a hand roll station for guests to build their own at the table. If you're traveling on the go, wrap the nori separately and assemble just before eating to maintain that signature crunch.
