We’re thrilled to kick off our new Seatopia Ambassador Recipe Series by spotlighting Lauren Less — a creator who combines her love of food with a passion for helping others heal.

Lauren (@Lesswithlaur) has built a community around allergy-friendly and wholesome recipes, chronic illness support, and non-toxic living. Through her blog Less With Laur, she offers nutrient-dense, gluten-free recipes and wellness tips that make cooking at home approachable and healing.

Meet Lauren

Lauren’s wellness journey began in her mid-20s when she was suddenly diagnosed with multiple food allergies and chronic health conditions. What started as a personal challenge became her mission: to share simple, wholesome recipes that support special diets and help others feel less alone in their healing.

“I started sharing my allergy-friendly and wholesome recipes using simple ingredients so that others could find recipes to make with food allergies or that met the needs of the special diets they were on due to chronic illness symptoms.”

Over time, her relationship with food — especially seafood — transformed. Though she didn’t enjoy much seafood growing up, learning about the nutrients it provides inspired her to bring it into her healing journey.

“Having chronic symptoms that I am working on healing means that I am super picky about the quality of my food. I love that Seatopia's seafood is lab tested to ensure it is mercury safe and free from detectable microplastics.”

Lauren’s Go-To: Salmon Cobb Salad

Fresh, colorful, and packed with nutrient-dense ingredients, Lauren’s Salmon Cobb Salad is a hearty meal that balances comfort with wellness.

Ingredients

  • 1 container romaine lettuce, chopped
  • 1/2 red onion, chopped
  • 1 cup grilled corn
  • 3 hard boiled eggs
  • 3/4 cup crumbled bacon
  • 2 Seatopia Ora King Salmon filets
  • 1 avocado, chopped
  • 1 cup cherry tomatoes, sliced
  • 1 tbsp honey
  • 1 tsp garlic powder
  • Dash of salt & pepper
  • Avocado oil
  • Fresh dill
  • Dressing of choice (Lauren used ranch)

Instructions

  • Marinate salmon with honey, garlic powder, salt, and pepper.
  • Add salmon into an oiled skillet and cook 3–5 minutes per side.
  • Assemble salad: start with romaine, then arrange red onion, corn, hard boiled eggs, bacon, salmon, avocado, and cherry tomatoes in rows.
  • Top with fresh dill and dressing of choice. Enjoy!

Lauren hopes her work shows that food is more than fuel — it’s powerful medicine.
