One Pan Mediterranean Salmon Pasta
Tender Seatopia Atlantic Salmon baked with feta, tomatoes, asparagus, greens, olives, and roasted garlic, then tossed with sourdough pasta.

Directions

1.Prepare the pan. Preheat the oven to 375°F. Place three Seatopia Atlantic Salmon fillets in a large baking dish. Add the feta in one corner, then arrange the cherry tomatoes, chopped asparagus, greens of choice (spinach works great), olives, and garlic bulb around the salmon. Drizzle everything generously with extra virgin olive oil.

2.Season the salmon. Squeeze fresh lemon juice over the salmon. Season the fillets with onion powder, garlic powder, sea salt, black pepper, and paprika.

3.Bake. Transfer the baking dish to the oven. Bake at 375°F for approximately 30 minutes, or until the vegetables are tender and the salmon is cooked through and flakes easily with a fork.

4.Prepare the pasta. While the salmon and vegetables bake, cook the sourdough pasta according to the package directions. Drain and set aside.

5.Make the sauce. Squeeze the roasted garlic cloves from their skins into the baking dish. Break up the feta, then stir it together with the roasted tomatoes and pan juices to create a creamy sauce.

6.Toss and finish. Add the cooked pasta to the baking dish and toss until evenly coated. Flake the salmon into large pieces and gently fold it into the pasta. Finish with fresh basil, grated cheese, an extra drizzle of olive oil, and a squeeze of lemon.
