🌞 Tropical Steelhead Crudo for the Solstice
Paired with functional ingredients from the “third growth zone”: roots, fungi, water plants, and sea vegetables.
Ingredients

6–8 oz Seatopia Steelhead loin

1 tbls Organic Extra Virgin Olive Oil

1 tbsp yuzu juice
- ½ small fennel bulb, shaved
- 1 inch fresh ginger root, julienned
- Handful of fresh watercress
- 1 tbsp tamari
- Zest of ½ lime
- 2 slices fresh pineapple
- 1 tsp grated ginger
- 1 tsp lime juice

Prepare the Pineapple Chutney

Lightly char the pineapple slices on a grill or cast iron pan until caramelized. Dice finely and mix with grated ginger, lime juice, and a drizzle of olive oil. Let sit to deepen flavors.
Slice the Steelhead

Using a sharp sashimi knife, slice Seatopia’s Steelhead loin into thin, even pieces. Keep chilled until plating.
Prep the Vegetables and Herbs

Shave fresh fennel paper-thin using a mandoline. Peel and thinly slice ginger root into matchsticks. Rinse and dry a handful of vibrant watercress.
Mix the Citrus Dressing

In a small bowl, combine 1 tbsp tamari, 1 tbsp yuzu juice, and the zest of half a lime. Stir well.
Plating Ritual

Lay steelhead slices onto a chilled plate. Spoon charred pineapple chutney over the center. Top with shaved fennel, ginger matchsticks, and sprigs of watercress. Drizzle the citrus dressing across the fish. Finish with a touch of high-polyphenol olive oil for added depth. Share as part of a nourishing sunset ritual, paired with stillness, gratitude, and breath.
