For the best flavor and texture, cook King Salmon to an internal
temperature of:

Medium Rare (115°-120 °F / 43-46°C)

The flesh will be slightly translucent in the center with a delicate,
flaky texture.

Well Done (145° - 150°F / 60° - 65°C):

The flesh will be completely opaque and flake easily.
