History & Origin

Steelhead Trout is an anadromous fish, meaning it spends part of its life in freshwater and part in the ocean, much like its salmon cousins. Native to North America, Steelhead populations originally thrived in Pacific coastal rivers, from California to Alaska. Unlike rainbow trout, which remain in freshwater their entire lives, Steelhead migrate to the ocean before returning to freshwater rivers to spawn. This migration gives Steelhead its firm texture and flavorful fat content, similar to salmon.

Steelhead temperature guide

For the best flavor and texture, cook steelhead to an internal
temperature of:

Medium Rare (115°-120 °F / 43-46°C)

The flesh will be slightly translucent in the center with a delicate,
flaky texture.

Well Done (145° - 150°F / 60° - 65°C):

The flesh will be completely opaque and flake easily.
