1.Scoop out the flesh of the avocados and add to a bowl with finely diced red onion, finely diced red chili, half of your cherry tomatoes (quartered), juice of 1 lime, 2 teaspoons of roughly chopped coriander, and salt & pepper to taste. Mash with a fork and store in refrigerator

2.In a separate bowl, combine shrimp (cut in half), a handful of roughly chopped coriander, mango cut into cubes, the remaining tomatoes (quartered), salt and pepper, 1 teaspoon chili flakes, juice of ½ lime, ¼ teaspoon paprika, and ¼ teaspoon cumin

3.Form a well in your bowl of guacamole and spoon in the shrimp mango salsa. Top with salt and pepper, a pinch of chili flakes, and lime wedges or juice to your liking
