We at Seatopia like to make this one on the beach. Classic guacamole, grilled Black Tiger Shrimp and a ripe mango salsa with a zing of lime and a touch of cilantro make a perfect surf snack. Tropical paradise on a plate, an appetizer that will transport you to sandy shores of Baja. Pack up your beach essentials and fire up the grill for this one!
Scoop out the flesh of the avocados and add to a bowl with finely diced red onion, finely diced red chili, half of your cherry tomatoes (quartered), juice of 1 lime, 2 teaspoons of roughly chopped coriander, and salt & pepper to taste. Mash with a fork and store in refrigerator
In a separate bowl, combine shrimp (cut in half), a handful of roughly chopped coriander, mango cut into cubes, the remaining tomatoes (quartered), salt and pepper, 1 teaspoon chili flakes, juice of ½ lime, ¼ teaspoon paprika, and ¼ teaspoon cumin
Form a well in your bowl of guacamole and spoon in the shrimp mango salsa. Top with salt and pepper, a pinch of chili flakes, and lime wedges or juice to your liking
